- In a large skillet, heat a splash of olive oil over medium heat until shimmering.
- Add the diced onion and sauté until soft and translucent, about 3-4 minutes. Then add the garlic and cook for another 1 minute until fragrant.
- Toss in the sliced smoked sausage and let it brown slightly for about 5 minutes while stirring occasionally.
- Stir in the diced bell peppers and cook for another 2-3 minutes until they become tender.
- Pour in the chicken broth and bring it to a gentle boil. Add the uncooked pasta, stirring to combine. Reduce the heat, cover, and simmer according to pasta package directions (usually 9-11 minutes).
- Once the pasta is cooked, pour in the heavy cream and cheese. Stir until the cheese melts and the sauce thickens. Season with salt and pepper to taste.
- Remove from heat and sprinkle with fresh parsley before serving.
Notes
For variations, add spinach or kale for a nutritious boost, spice it up with red pepper flakes or jalapeños, or try different types of cheese.
