Cooking Instructions
  1. In a large skillet, heat the olive oil over medium heat until it shimmers.
  2. Season the chicken with salt and pepper and add it to the skillet. Sear for about 5 minutes per side until golden brown.
  3. Add the chopped onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
  4. Pour in the rice, chicken broth, and honey BBQ sauce. Stir everything gently to combine.
  5. Cover the skillet with a lid, reduce heat to low, and let it simmer for about 25 minutes.
  6. Once done, fluff the rice with a fork and garnish with chopped green onions or parsley before serving.

Notes

This dish can be made vegetarian by swapping chicken for tofu or using quinoa instead of rice. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
