Main Ingredients
  • 1 pound Kielbasa, sliced Smoked sausage works well too.
  • 2 cups Bell Peppers, diced Any color; mix for a festive touch.
  • 1 medium Onion, sliced Red or yellow adds sweetness.
  • 1 medium Zucchini, sliced Can be swapped with broccoli.
  • 1 cup Baby Carrots, halved Regular carrots can be used, cut into sticks.
  • 3 cloves Garlic, minced Roasting gives a milder flavor.
Sauce Ingredients
  • 1/4 cup Honey Maple syrup can be used as an alternative.
  • 1/4 cup Soy Sauce Use tamari for gluten-free.
  • 2 tablespoons Olive Oil
  • To taste Salt & Pepper
  • Optional Red Pepper Flakes For added heat.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Prepare a large baking sheet by drizzling it with olive oil.
  3. In a large bowl, toss together the sliced kielbasa, bell peppers, onion, zucchini, and carrots.
  4. In a small bowl, whisk together honey, soy sauce, minced garlic, salt, pepper, and red pepper flakes (if using).
  5. Drizzle the honey garlic mixture over the kielbasa and veggies, mixing gently.
  6. Transfer the mixture to the prepared baking sheet and spread it in a single layer.
Cooking
  1. Roast in the oven for about 25-30 minutes, stirring halfway through.
  2. Once the kielbasa is caramelized and the veggies are tender, remove from the oven and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Freeze individual portions and thaw overnight before reheating. Reheat in the oven or microwave with a splash of water.
