- In a large skillet, heat a drizzle of olive oil over medium-high heat. Remove the casing from the Italian sausage and crumble it into the pan. Cook until browned and cooked through, about 5-7 minutes.
- Toss in the diced onion and garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes. Be careful not to let the garlic burn.
- Add the gnocchi and halved cherry tomatoes to the pan. Stir well to combine.
- Sprinkle the Italian seasoning over the mixture and season with salt and pepper to taste. Add a splash of water or broth and cover the pan. Let it simmer for about 5-7 minutes, or until the gnocchi are tender.
- Stir in the baby spinach until wilted.
- Serve hot, topped with freshly grated Parmesan cheese.
