  • 1 bell pepper Choose your favorite color for added sweetness.
  • 1 medium onion A sweet onion works best, but any variety will do.
  • 3 tablespoons olive oil To help the vegetables roast beautifully.
  • 2 teaspoons garlic powder For a comforting aroma.
  • 1 teaspoon paprika Adds delightful depth of flavor.
  • Salt and pepper To taste.
  • Fresh parsley (optional) For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) while you prep the ingredients.
  2. In a large bowl, combine halved baby potatoes, sliced bell pepper, and sliced onion.
  3. Drizzle with olive oil and season with garlic powder, paprika, salt, and pepper. Toss until well coated.
  4. Slice the kielbasa into bite-sized pieces and add to the bowl. Mix gently to incorporate the flavors.
Roasting
  1. Pour everything onto a large baking sheet in a single layer to ensure even roasting.
  2. Place the baking sheet in the preheated oven and roast for 25-30 minutes until the potatoes are tender and golden brown, stirring halfway through.
Serving
  1. Once out of the oven, sprinkle with chopped fresh parsley if desired. Serve warm.

Notes

This dish is perfect for leftovers. Store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or skillet, adding moisture if needed. It can also be frozen in portions for future meals.
