Preparation
- In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the sliced kielbasa and sauté until browned, about 5 minutes.
- Add the diced onion and bell pepper to the pot. Sauté for an additional 3-4 minutes until the onions turn translucent, and the peppers soften slightly.
- Stir in the minced garlic and cook for about 30 seconds, until fragrant.
Cooking
- Pour in the can of diced tomatoes (with juice), chicken broth, and Italian seasoning. Stir well to combine all the flavors.
- Bring the mixture to a gentle simmer and then add the pasta. Let it cook uncovered for about 10-12 minutes, stirring occasionally, until the pasta is al dente.
- Fold in the fresh spinach just a couple of minutes before the pasta is finished cooking, allowing it to wilt beautifully. Season with salt and pepper according to your taste.
Serving
- Serve warm, and finish with a sprinkle of Parmesan cheese.
Notes
This recipe is excellent for meal prepping and can be made ahead of time for quick lunches or dinners throughout the week. You can also modify it with seasonal vegetables or spices.
