  1. In a large pot, heat the olive oil over medium heat. Once warm, add the minced garlic and sauté for about 1 minute until fragrant, but be careful not to burn it.
  2. Pour in the vegetable broth and the canned diced tomatoes with their juices. Stir to combine and allow the mixture to come to a simmer.
  3. Add the heavy cream, tortellini, Italian seasoning, and season with salt and pepper. Stir gently until the tortellini is evenly distributed in the sauce.
  4. Cover the pot and let it simmer for about 5-7 minutes, or until the tortellini is cooked through and tender.
  5. Remove from heat and let the dish rest for a minute before serving. Garnish with fresh basil for a pop of color and flavor.
