Preparation
- Brown the sausage in a skillet over medium heat until fully cooked. Drain any excess grease and set aside.
- In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
- In the same bowl, add the cooked sausage, diced bell peppers, and cubed bread. Fold until everything is coated in the egg mixture.
- Gently mix in the shredded cheese, reserving a bit for topping.
- Pour the mixture into a greased 9×13-inch baking dish. Sprinkle the reserved cheese on top.
- Cover the dish with plastic wrap and refrigerate overnight.
Baking
- The next morning, preheat your oven to 350°F (175°C).
- Uncover the casserole and bake for 45 minutes, or until the top is golden and the center is set.
- Let it cool for a few minutes before slicing and serving warm.
Notes
Serve with fresh fruit or a dollop of sour cream. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F until warmed through.
