  • 1 cup shredded cheese Cheddar works beautifully, but feel free to mix it up!
  • 6 cups cubed bread Day-old bread is perfect for soaking in the egg mixture.
  • to taste salt and pepper Essential for enhancing all the flavors.

Preparation
  1. Brown the sausage in a skillet over medium heat until fully cooked. Drain any excess grease and set aside.
  2. In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  3. In the same bowl, add the cooked sausage, diced bell peppers, and cubed bread. Fold until everything is coated in the egg mixture.
  4. Gently mix in the shredded cheese, reserving a bit for topping.
  5. Pour the mixture into a greased 9×13-inch baking dish. Sprinkle the reserved cheese on top.
  6. Cover the dish with plastic wrap and refrigerate overnight.
Baking
  1. The next morning, preheat your oven to 350°F (175°C).
  2. Uncover the casserole and bake for 45 minutes, or until the top is golden and the center is set.
  3. Let it cool for a few minutes before slicing and serving warm.

Notes

Serve with fresh fruit or a dollop of sour cream. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F until warmed through.
