  • 2 lbs turnips, peeled and diced Feel free to swap with parsnips for a sweeter flavor.
  • 3 tablespoons olive oil Can use melted butter for a richer taste.
  • 1/2 cup grated Parmesan cheese The star of the dish!
  • Salt and pepper To taste.
  • Optional herbs: thyme or rosemary For an aromatic twist.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large pot of salted water, boil the diced turnips for about 15 minutes or until tender. Drain and return them to the pot.
  3. Using a potato masher, crush the turnips until smooth while still leaving some texture.
  4. Add in olive oil, Parmesan, salt, and pepper. Mix well until everything is combined.
Baking
  1. Spread the mixture into a greased baking dish and sprinkle any remaining Parmesan cheese on top.
  2. Bake for 20-25 minutes, or until the top is golden and crispy.
Serving
  1. Let it cool for a few minutes before serving. Enjoy the delightful crispy crust with the creamy turnip underneath.

Notes

Feel free to experiment with other cheeses, add bacon or pancetta for a festive version, or use Greek yogurt for a healthier option. Best enjoyed freshly baked.
