Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, combine softened butter, granulated sugar, and brown sugar. Beat until fluffy for about 2-3 minutes.
- Mix in the egg and vanilla extract until fully combined.
- Gradually fold the dry ingredients into the wet mixture until a soft dough forms.
- Using a small cookie scoop or spoon, drop rounded tablespoons of dough on a baking sheet lined with parchment paper, leaving space for them to spread.
Baking
- Bake the cookies for 8-10 minutes, or until the edges look set but the centers are still soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Assembly
- Once cooled, scoop a generous amount of ice cream onto the flat side of one cookie and place another cookie on top, pressing gently to make a sandwich.
- Roll the edges in red, white, and blue sprinkles to make them festive.
Notes
Store leftovers in an airtight container in the freezer for up to a week. Bring them out a few minutes before serving.
