Ingredients
  

For the Cookie Base
  • 1 cup all-purpose flour for that classic texture
  • 1/2 cup unsweetened cocoa powder for a rich flavor
  • 1/2 tsp baking soda to help them rise
  • 1/4 tsp salt to enhance sweetness
  • 1/3 cup granulated sugar for sweetness
  • 1/3 cup brown sugar for moisture and depth
  • 1/4 cup unsalted butter, softened the secret to tender cookies
  • 1 large egg to bind everything together

For Assembly
  • 2 cups ice cream vanilla or any preferred flavor
  • 1 cup red, white, and blue sprinkles for that festive flair

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, combine softened butter, granulated sugar, and brown sugar. Beat until fluffy for about 2-3 minutes.
  4. Mix in the egg and vanilla extract until fully combined.
  5. Gradually fold the dry ingredients into the wet mixture until a soft dough forms.
  6. Using a small cookie scoop or spoon, drop rounded tablespoons of dough on a baking sheet lined with parchment paper, leaving space for them to spread.
Baking
  1. Bake the cookies for 8-10 minutes, or until the edges look set but the centers are still soft.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Assembly
  1. Once cooled, scoop a generous amount of ice cream onto the flat side of one cookie and place another cookie on top, pressing gently to make a sandwich.
  2. Roll the edges in red, white, and blue sprinkles to make them festive.

Notes

Store leftovers in an airtight container in the freezer for up to a week. Bring them out a few minutes before serving.
