Ingredients
  

Fruit Mixture
  • 6 cups fresh peaches, peeled and sliced (or use canned if fresh are out of season) Choose ripe peaches for best flavor.
  • 1/2 cup granulated sugar Use less if peaches are very sweet.
  • 1 tsp cinnamon Ground cinnamon for warmth.
  • 1 tsp vanilla extract
Batter
  • 1 cup all-purpose flour Can use gluten-free flour for a gluten-free option.
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted Butter the dish for a golden crust.
  • a dash nutmeg Optional for extra warmth.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup of sugar, cinnamon, and vanilla extract. Stir gently and let them sit for about 10 minutes.
  3. In another bowl, mix the flour, baking powder, salt, and remaining sugar. Pour in the milk and melted butter, stirring until just combined. Lumps are okay.
Baking
  1. Pour the batter into a greased 9x13 inch baking dish, spreading it evenly.
  2. Carefully spoon the peach mixture on top of the batter without stirring.
  3. Bake for 40-45 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
Serving
  1. Let it cool for a few minutes before serving. Enjoy warm with vanilla ice cream or whipped cream.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. Reheat at 350°F for 15-20 minutes.
