Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare the peaches by peeling and slicing them. Combine with sugar, brown sugar, and cinnamon, and set aside.
  3. In a mixing bowl, combine flour, baking powder, and salt. Cut in the melted butter until the mixture resembles coarse crumbs. Stir in the milk and vanilla extract until just combined.
Assembly and Baking
  1. Pour the batter into a greased 9x13 inch baking dish.
  2. Layer the peach mixture over the batter, allowing some of the juices to mix in.
  3. Bake in your preheated oven for around 40 minutes, or until the top is golden brown and the peaches are bubbly.
  4. Let cool slightly before serving.

Notes

Serve warm, ideally with a scoop of vanilla ice cream or whipped cream on top. Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, warm in the oven at 350°F until heated through.
