Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss the sliced peaches with 1/2 cup of sugar, lemon juice, cinnamon, and cornstarch. Let this sit while you make the batter.
- In another bowl, whisk together the flour, remaining sugar, baking powder, and salt.
- Add the milk and melted butter to the dry ingredients, stirring until just combined. The batter will be somewhat lumpy.
- Spread the batter evenly into a greased 9x13 inch baking dish. Pour the peach mixture over the top, allowing it to seep into the batter.
Baking
- Bake in the preheated oven for 35 to 40 minutes, or until the top is golden brown and bubbly.
- Allow it to cool for a few minutes before serving.
Notes
Serve with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350°F until warm.
