Ingredients
  

Main Ingredients
  • 4 large large flour tortillas You can use whole wheat or corn tortillas for a different take.
  • 2 cups shredded mozzarella cheese Provolone or cheddar can also work beautifully.
  • 1 cup sliced pepperoni Turkey or veggie versions for a healthier twist.
  • 1 tablespoon Italian seasoning A pinch of oregano and basil can be used instead.
  • to taste Olive oil or butter for frying Use for a rich, flavorful crust.

Method
 

Preparation
  1. Preheat a non-stick skillet over medium heat. Add just enough olive oil or butter to coat the bottom lightly.
Assembly
  1. Lay one tortilla in the skillet, sprinkle half of the shredded mozzarella cheese evenly over the tortilla. Layer half of the pepperoni slices on top, followed by a sprinkle of Italian seasoning. Top with a bit more cheese and place a second tortilla over this.
Cooking
  1. Cook the pizzadilla for about 3-4 minutes on one side until golden and the cheese starts to melt. Carefully flip it over using a spatula, and cook for an additional 3-4 minutes on the other side.
  2. Remove the completed pizzadilla from the skillet and repeat the assembly and cooking process with the remaining tortillas and filling.
Serving
  1. Once all are cooked, slice them into wedges and serve warm with your favorite marinara sauce for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet for best results.
