Method
 

Preparation
  1. Start by gathering all your ingredients on a clean counter.
  2. Peel and dice your cucumbers into bite-sized pieces.
  3. Dice the fresh pineapple into similar-sized chunks.
  4. Finely chop the red onion and cilantro, and toss everything together in a large mixing bowl.
  5. Squeeze the lime juice over the salad and season with salt and pepper to taste.
  6. Gently mix to prevent breaking the pineapple and cucumber pieces.
  7. Chill in the refrigerator for at least 20 minutes before serving.

Notes

This salad keeps well in the fridge for 2-3 days. If adding avocado, enjoy it fresh to prevent browning.
