Preparation
- Preheat your oven to 400°F (200°C).
- Slice the kielbasa into 1-inch thick pieces, creating deep 'hasselbacks' but leaving about a quarter inch intact at the bottom.
- Peel, core, and cut the pineapple into bite-sized chunks, aiming for uniform sizes.
- In a small bowl, combine the brown sugar, soy sauce, garlic powder, and paprika to create the glaze.
Baking
- Place the sliced kielbasa on a parchment-lined baking sheet and rub the brown sugar mixture over each piece.
- Nestle the pineapple chunks around the kielbasa.
- Bake in the preheated oven for 20-25 minutes or until the kielbasa is golden and the pineapple is charred.
- Let them cool slightly before serving warm.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place in the oven at 350°F (175°C) for 10-15 minutes.
