  • 1 fresh pineapple Sweet and ripe! Canned pineapple slices can work, but fresh caramelizes beautifully.

  • 2 tablespoons brown sugar Enhances the natural sweetness of the pineapple.
  • 1 tablespoon soy sauce Adds depth and umami flavor.
  • 1 teaspoon garlic powder For warmth and rich flavor.
  • 1 teaspoon paprika Adds a touch of smokiness.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the kielbasa into 1-inch thick pieces, creating deep 'hasselbacks' but leaving about a quarter inch intact at the bottom.
  3. Peel, core, and cut the pineapple into bite-sized chunks, aiming for uniform sizes.
  4. In a small bowl, combine the brown sugar, soy sauce, garlic powder, and paprika to create the glaze.
Baking
  1. Place the sliced kielbasa on a parchment-lined baking sheet and rub the brown sugar mixture over each piece.
  2. Nestle the pineapple chunks around the kielbasa.
  3. Bake in the preheated oven for 20-25 minutes or until the kielbasa is golden and the pineapple is charred.
  4. Let them cool slightly before serving warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place in the oven at 350°F (175°C) for 10-15 minutes.
