  • 1 loaf 1 loaf of bread Day-old bread works best; try sourdough or whole wheat for flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the breakfast sausage over medium heat until browned. Use a wooden spoon to crumble it as it cooks. Once finished, drain any excess fat and set aside.
  3. Cut the bread into cubes and place them in a greased baking dish.
  4. In a separate bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
  5. Add the cooked sausage and cheese to the bread cubes. Pour the egg mixture over everything, ensuring all bread is soaked. Gently press down to make sure it all comes together.
Baking
  1. Place the dish in the preheated oven and bake for 35-40 minutes or until the top is golden brown and the casserole has puffed up.
  2. Once golden and cooked through, let it cool for a few minutes before slicing.

Notes

You can prepare this casserole ahead of time, and store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a 350°F oven until warmed through. Consider using stale bread for better absorption of the egg mixture.
