Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1/2 cup protein powder (vanilla or chocolate)
  • 1 pinch salt
Wet Ingredients
  • 1/2 cup nut butter (peanut, almond, or your favorite) Can swap for seed butter if nut allergies are present.
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
Optional Ingredients
  • 1/4 cup dark chocolate chips Optional but recommended.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, protein powder, and salt. Stir to combine.
  3. In another bowl, whisk together the nut butter, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and mix well. If you’re adding chocolate chips, fold them in now.
  5. Scoop out tablespoon-sized portions of the mixture and place them on the prepared baking sheet, leaving space in between.
Baking
  1. Bake for 10-12 minutes, until the edges are slightly golden.
  2. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies will firm up as they cool, becoming chewy and delicious. For variations, consider adding dried fruits, spices, or nuts.
