Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the rolled oats, protein powder, and salt. Stir to combine.
- In another bowl, whisk together the nut butter, honey (or maple syrup), and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and mix well. If you’re adding chocolate chips, fold them in now.
- Scoop out tablespoon-sized portions of the mixture and place them on the prepared baking sheet, leaving space in between.
Baking
- Bake for 10-12 minutes, until the edges are slightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
These cookies will firm up as they cool, becoming chewy and delicious. For variations, consider adding dried fruits, spices, or nuts.
