  • 1 cup pumpkin puree preferably homemade, but store-bought works too
  • 1 cup granulated sugar
  • ½ cup brown sugar for added moisture
  • ½ cup vegetable oil or melted butter for richness
  • 2 large eggs
Dry Ingredients
  • cups all-purpose flour or swap with whole wheat for a healthier option
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
Optional Ingredients
  • ½ cup chopped walnuts or pecans optional, for added crunch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, and vegetable oil until fully combined. Add the eggs, one at a time, beating well after each addition.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually pour the dry ingredients into the wet mixture, stirring until just combined. Be careful not to over-mix; a few lumps are perfectly fine.
  5. Gently fold in the chopped walnuts or pecans if using.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Store wrapped at room temperature for up to three days or in the refrigerator for about a week. Can be frozen for longer storage.
