Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan with cooking spray or butter.
- In a mixing bowl, beat the softened cream cheese until smooth and creamy. Set aside.
- In a separate bowl, combine the pumpkin puree, sugar, and oil. Beat in the eggs and vanilla extract until fully incorporated.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and spices.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Be careful not to over-mix.
- Pour half of the pumpkin mixture into the prepared loaf pan. Then, add a layer of the cream cheese mixture, followed by the remaining pumpkin batter on top.
- Use a knife or a skewer to gently swirl the cream cheese through the pumpkin batter for a marbled effect.
- Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
