  • 1 cup Pumpkin Puree (canned or homemade) Can substitute with mashed bananas for a twist.
  • 6 oz Cream Cheese, softened For a lighter option, use low-fat cream cheese.
  • 1 cup Sugar (granulated and/or brown sugar) Adjust based on sweetness preference.
  • 1/2 cup Vegetable Oil Can be replaced with applesauce for a healthier option.
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 1 1/2 cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Spices (cinnamon, nutmeg, and a pinch of cloves) Use 1 tsp cinnamon, 1/2 tsp nutmeg, and a pinch of cloves.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with cooking spray or butter.
  2. In a mixing bowl, beat the softened cream cheese until smooth and creamy. Set aside.
  3. In a separate bowl, combine the pumpkin puree, sugar, and oil. Beat in the eggs and vanilla extract until fully incorporated.
  4. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and spices.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Be careful not to over-mix.
  6. Pour half of the pumpkin mixture into the prepared loaf pan. Then, add a layer of the cream cheese mixture, followed by the remaining pumpkin batter on top.
  7. Use a knife or a skewer to gently swirl the cream cheese through the pumpkin batter for a marbled effect.
  8. Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
