For the Pumpkin Bread
  • 1 cup Pumpkin Puree Fresh or canned
  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 2 Eggs
  • 1 teaspoon Cinnamon Adjust based on taste preference
  • 1/2 teaspoon Nutmeg Adjust based on taste preference
  • 1/4 teaspoon Cloves Adjust based on taste preference
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt To enhance flavors
For the Cream Cheese Frosting
  • 8 oz Cream Cheese Softened
  • 1/4 cup Butter Softened
  • 2 cups Powdered Sugar To taste for sweetness

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a medium bowl, combine flour, baking powder, baking soda, salt, and spices. Whisk until well blended.
  3. In a separate large bowl, mix pumpkin puree, granulated sugar, brown sugar, and eggs until smooth and creamy.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
Baking
  1. Pour the batter into the prepared loaf pan and bake for about 60 minutes, or until a toothpick comes out clean.
  2. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Frosting
  1. While the bread cools, prepare the frosting by beating softened cream cheese and butter until creamy.
  2. Gradually add powdered sugar until the desired sweetness and consistency are reached.
  3. Once the bread is cooled, spread the frosting generously on top and enjoy!

Notes

Store leftovers wrapped in plastic or in an airtight container for 2-3 days at room temperature or up to a week in the refrigerator. You can freeze the bread for later enjoyment.
