Method
Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until well combined.
- In a separate bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, salt, and allspice.
- Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay!
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Maple Glaze
- While the bread is cooling, prepare the maple glaze. In a small bowl, whisk together powdered sugar, maple syrup, and milk until smooth and pourable.
- Once the loaf is cool, drizzle the glaze over the top and let it set before slicing.
Notes
Feel free to get creative with this recipe! Add nuts or chocolate chips for extra texture. For a healthier option, swap some of the flour for whole wheat flour. Ensure ingredients are at room temperature for best results.
