  • 1 cup pumpkin puree (fresh or canned)
  • ½ cup vegetable oil (can substitute applesauce for a lighter option)
  • 1 cup granulated sugar Consider swapping half for brown sugar for a deeper flavor
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • cups all-purpose flour (whole wheat can be used for an extra health boost)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ginger (optional, but adds a lovely warmth)
  • ½ teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your loaf pan with butter or cooking spray.
  2. In a large mixing bowl, combine the pumpkin puree, vegetable oil, sugar, eggs, and vanilla extract. Beat together until smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. If desired, fold in walnuts or chocolate chips.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
  2. Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For variations, consider adding a tablespoon of instant coffee for a Pumpkin Spice Latte loaf, use a gluten-free flour blend, or incorporate citrus zest for a refreshing twist. Serve with whipped cream or cream cheese frosting.
