  • 1 handful fresh parsley or cilantro Chopped, for added freshness.
Dressing Ingredients
  • 3 tablespoons olive oil Opt for the extra virgin variety for depth of flavor.
  • 2 tablespoons vinegar Red wine or apple cider vinegar works wonderfully.

Preparation
  1. Start by washing all your vegetables thoroughly.
  2. Peel the cucumbers if desired, and slice them into thin rounds.
  3. Core and chop the tomatoes into bite-sized pieces. If you use cherry tomatoes, simply halve them.
  4. Thinly slice the red onion and soak it in cold water for about 5 minutes to mellow its sharpness.
Assembly
  1. In a large bowl, gently combine the cucumbers, tomatoes, and drained onions.
  2. In a small bowl, whisk together the olive oil, vinegar, salt, and pepper.
  3. Drizzle the dressing over the salad and toss until well combined.
  4. Add the freshly chopped parsley or cilantro, give it another gentle toss, and serve immediately.

Notes

Feel free to swap ingredients; for instance, use red wine vinegar instead of apple cider, or add bell peppers for extra crunch. When storing leftovers, place the salad in an airtight container in the refrigerator for up to two days.
