Salad Ingredients
  • 2 cups cheese tortellini (fresh or frozen) Use fresh for faster cooking.
  • 1 cup roasted red peppers, diced Jarred or homemade.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • to taste salt and pepper
  • for garnish Fresh basil or parsley

Method
 

Preparation
  1. Cook the tortellini according to package instructions. Frozen tortellini may take a few extra minutes.
  2. Once cooked, drain the tortellini and rinse it under cold water to stop the cooking process.
  3. In a large bowl, combine the drained tortellini, roasted red peppers, and cherry tomatoes.
  4. In a small bowl or jar, whisk together the olive oil and balsamic vinegar. Pour the dressing over the tortellini mixture.
  5. Add the freshly grated Parmesan cheese, salt, and pepper. Toss gently to coat everything.
  6. Taste and adjust seasoning as needed. Garnish with chopped fresh basil or parsley.

Notes

This salad can be served warm, cold, or at room temperature. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
