Preparation
- Preheat your oven to 400°F (200°C).
- Peel the sweet potatoes and slice them into even rounds, about ½-inch thick.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, pepper, and paprika.
- Spread the seasoned sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
Roasting
- Place the baking sheet in the oven and roast for about 25–30 minutes, flipping the rounds halfway through.
- Sprinkle the roasted sweet potatoes with crumbled feta cheese and drizzle with honey while still warm.
Serving
- Garnish with fresh herbs if desired, and serve warm as an appetizer or side dish.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat at 350°F (175°C) for about 10 minutes. Choose sweet potatoes that are roughly the same size for even cooking. For extra depth, roast garlic cloves alongside the sweet potato rounds.
