  • 1 cup Breadcrumbs For texture and crunch

Preparation
  1. In a large bowl, combine the canned salmon (drained), breadcrumbs, minced onion, garlic, and herbs.
  2. Crack in the eggs and season with salt and pepper. Mix until all ingredients are well-blended, but don’t overwork the mixture — you want it light.
  3. Shape the mixture into patties, about 2-3 inches in diameter.
Cooking
  1. In a skillet, heat a couple of tablespoons of oil over medium heat until it shimmers.
  2. Carefully place the patties in the pan. Cook for about 4-5 minutes on each side or until golden brown. You’ll know they’re ready when they release a delicious aroma.
  3. Once cooked, let the patties drain on paper towels and serve warm.

Notes

These salmon patties can be enjoyed with lemon or tartar sauce. For added nutrition, consider incorporating grated zucchini or carrots. Alternatively, bake them for a healthier option.
