  • 30 oz frozen hash browns (thawed if desired)
  • 8 oz cream cheese (softened)
  • 6 large eggs
  • 2 cups shredded cheese (like cheddar or a mix of your favorites)
  • 1 cup milk

  • optional chopped green onions or bell peppers for garnish

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, crumble and cook the sausage until browned. Drain excess fat and set aside.
  3. In a large bowl, whisk together the eggs, cream cheese, milk, salt, and pepper until smooth.
  4. In a greased 9x13-inch baking dish, layer the thawed hash browns and cooked sausage, then pour the egg mixture evenly over the top.
  5. Sprinkle the shredded cheese all over the top.
Baking
  1. Place in the preheated oven and bake for 30-35 minutes or until golden brown and the eggs have set.
  2. Allow the casserole to cool slightly before serving. Garnish with chopped green onions or any optional toppings you desire.

Notes

Customize the seasoning to your liking. Don’t rush the cooking to allow the sausage to brown well, which enhances flavor. This dish can be made ahead of time and reheated for convenient breakfasts.
