  • 4 medium potatoes, peeled and diced Yellow potatoes are great for creaminess.
  • 2 cups fresh green beans, trimmed For a pop of color and crunch.
  • 1 medium onion, chopped Sweet or yellow; it’s all about personal preference.
  • 3 cloves garlic, minced Because garlic makes everything better!
  • 1 can cream of mushroom soup For that creamy binding texture.
  • 1 cup shredded cheddar cheese Or a blend of your favorites like mozzarella and Monterey Jack for a melty finish.
  • to taste salt and pepper Elevate the flavors to perfection.
  • 1 tablespoon olive oil Just a whisper for sautéing.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the olive oil and sauté the chopped onion and garlic until they’re soft and fragrant, about 3-4 minutes.
  3. Add the ground sausage, crumbling it as it cooks until it’s browned. Drain excess fat if needed.
  4. In a large bowl, combine the diced potatoes, sautéed sausage, fresh green beans, cream of mushroom soup, and a dash of salt and pepper. Mix well.
  5. Spread the mixture evenly into a greased 9x13-inch baking dish.
Baking
  1. Bake in the preheated oven for about 25 minutes.
  2. After 25 minutes, pull it out, sprinkle the cheese on top, and return it to the oven for an additional 15 minutes until bubbly and golden.

Notes

Feel free to swap the sausage for turkey sausage or tofu for a healthier option. To serve, garnish with freshly chopped parsley or green onions.
