Preparation
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- In a bowl, mix olive oil, minced garlic, grated parmesan, dried oregano, lemon juice, salt, and pepper until well combined.
- Cut the chicken breast into bite-sized pieces and add them to the bowl. Toss until the chicken is fully coated in the marinade. Let it marinate for at least 10 minutes.
- While the chicken marinates, preheat your grill or grill pan over medium-high heat.
- Thread the marinated chicken pieces onto the skewers, leaving space between each piece for even cooking.
Cooking
- Place the skewers on the hot grill and cook for about 15 minutes, turning occasionally until the chicken is golden brown and cooked through.
- Remove from the grill, let them rest for a few minutes, and serve hot, sprinkled with additional parmesan if desired.
Notes
For variations, consider adding bell peppers or zucchini to the skewers, or spice up with red pepper flakes. Leftovers can be stored in an airtight container for up to three days. Reheat gently in a skillet or microwave.
