- In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add chopped onions and cook until translucent, about 4-5 minutes. Add minced garlic and sauté for another minute until fragrant.
- Increase the heat to medium-high, and add ground beef to the skillet. Break it up with a wooden spoon and cook until browned, about 6-8 minutes. Season with salt and pepper.
- Stir in black beans, tomato sauce, and chipotle sauce. Lower heat and let it simmer for about 10 minutes.
- While the filling simmers, warm tortillas in a separate pan or microwave to make them pliable.
- Spoon a generous amount of the beef filling into the center of each tortilla. Top with shredded cheese, then fold in the sides and roll tightly.
- Place the burritos seam-side down in a greased baking dish. Pour any remaining chipotle sauce over the top, sprinkling extra cheese if desired.
- Preheat your oven to 350°F (175°C) and bake the burritos for about 20 minutes, until the cheese is bubbly and golden.
Notes
Feel free to get creative with these burritos! Swap out the ground beef for shredded chicken or a vegetarian option. You can also add diced bell peppers or corn for extra flavor.
