Ingredients
  

For the fajitas
  • 1 pound boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Tortillas for serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). This ensures that your fajitas cook perfectly.
  2. In a large bowl, combine your sliced chicken, red and yellow bell peppers, and red onion.
  3. Drizzle with olive oil and sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the mixture. Toss everything together until well coated.
  4. Transfer the chicken and vegetable mixture to a large sheet pan. Spread it out evenly.
  5. Place the pan in the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
  6. Once cooked, remove the pan from the oven, and squeeze fresh lime juice over the top.
  7. Garnish with chopped cilantro and serve warm with tortillas, letting everyone create their own fajitas.

Notes

Feel free to swap out bell peppers with zucchini or mushrooms. Serve with guacamole, sour cream, and fresh salsa for a complete meal.
