  • 1 pound ground beef (or turkey for a lighter option)
  • 1 medium onion, diced
  • 1 each bell pepper, chopped (red or green)
  • 2 cups frozen corn
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon taco seasoning (or to taste)
  • 2 cups shredded cheese (cheddar or a blend)
  • Salt and pepper to taste
  • Optional: fresh cilantro or green onions for garnish

Preparation
  1. In a skillet over medium heat, brown the ground beef with diced onion until the meat is fully cooked and the onions are softened. Drain excess fat if necessary.
  2. Transfer the beef and onion mixture to your slow cooker.
  3. Add the chopped bell pepper, frozen corn, black beans, diced tomatoes, and taco seasoning to the mix.
  4. Stir everything together until well combined.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Before serving, sprinkle the shredded cheese on top. Cover and let it melt for about 10 minutes.
  7. Serve hot, garnished with fresh cilantro or green onions if desired.

Notes

This casserole is versatile. Try adding jalapeƱos for heat or incorporating seasonal ingredients like butternut squash.
