- In a skillet over medium heat, brown the ground beef with diced onion until the meat is fully cooked and the onions are softened. Drain excess fat if necessary.
- Transfer the beef and onion mixture to your slow cooker.
- Add the chopped bell pepper, frozen corn, black beans, diced tomatoes, and taco seasoning to the mix.
- Stir everything together until well combined.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, sprinkle the shredded cheese on top. Cover and let it melt for about 10 minutes.
- Serve hot, garnished with fresh cilantro or green onions if desired.
