Preparation
  1. Trim excess fat from the pork and cut it into chunks.
  2. In the slow cooker, combine the pork, pineapple chunks, soy sauce, brown sugar, minced garlic, onion, and ginger if using.
  3. Sprinkle with salt and pepper. Stir to coat everything evenly.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 4-6 hours. The pork should be fork-tender when done.
  2. If desired, mix cornstarch with a little cold water to create a slurry. Stir this into the slow cooker about 30 minutes before serving to thicken the sauce.

Notes

Feel free to swap the pineapple with citrus like oranges or add vegetables such as bell peppers or snap peas. Leftovers can be stored in an airtight container in the fridge for up to 4 days, or frozen for up to 3 months. For a richer flavor, consider searing the pork before cooking.
