Ingredients
  

Wet Ingredients
  • 1 cup pumpkin puree (canned or homemade for extra flavor)
  • 1/2 cup sugar (brown or granulated)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour (or a gluten-free substitute if desired)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
Cinnamon Swirl Mixture
  • 1/4 cup brown sugar (for the cinnamon swirl)
  • 1 tablespoon ground cinnamon (for the swirl)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a small loaf pan by greasing it or lining it with parchment paper.
  2. In a large bowl, whisk together the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk the flour, baking soda, baking powder, pumpkin pie spice, and salt together.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix!
  5. In a small bowl, mix the brown sugar and ground cinnamon together.
  6. Pour half of the pumpkin batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture on top. Pour the remaining batter over it and top with the remaining cinnamon-sugar. Using a knife, gently swirl the batter to create a pretty marbled effect.
Baking
  1. Place the loaf in the preheated oven and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

To store your leftover pumpkin bread, wrap it tightly in plastic wrap or aluminum foil and keep it at room temperature for up to 3 days. If you want it to last longer, you can freeze it for up to 3 months! Just make sure to slice it before freezing, so you can enjoy a piece anytime. To reheat, simply pop a slice in the microwave for a few seconds or enjoy it lightly toasted.
