Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
- In a separate bowl, mix together the flour, baking soda, baking powder, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix!
- Gently fold in the grated zucchini and chopped nuts (if using).
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Topping
- In a small bowl, mix together a tablespoon of sugar with an extra half teaspoon of cinnamon, then sprinkle it over the top of the batter.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Reheat in the microwave for a few seconds to enjoy the flavors again. Don’t skip the cinnamon topping for signature flavor!
