Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, whisk together the pumpkin puree, sugar, sour cream, vegetable oil, melted butter, and eggs until smooth and fully combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined. Be careful not to overmix; small lumps are perfectly fine.
- If desired, stir in the chopped nuts or chocolate chips.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
- Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve warm with a pat of butter. Can be modified by substituting half of the flour with whole wheat flour or using coconut sugar. Add dried cranberries or orange zest for a festive touch.
