Preparation
- Preheat your oven to 350°F (175°C).
- Prepare the peaches: If using fresh peaches, peel and slice them, then toss them with sugar and let them sit for about 10 minutes to release their juices.
- Melt the butter in a 9x13-inch baking dish while the oven preheats.
- Mix the dry ingredients: In a bowl, whisk together the flour, baking powder, and cinnamon.
- Combine dry and wet: Add the milk and remaining sugar to the dry mixture and stir until just combined. Avoid overmixing; a few lumps are fine.
- Pour the batter over the melted butter in the baking dish. Do not stir; allow the butter to float up around the batter.
- Spoon the peach mixture over the batter and sprinkle with any remaining juices.
Baking
- Bake for 45-50 minutes, or until the top is golden brown and bubbling.
- Let it cool slightly before serving to help the cobbler set up a bit.
Notes
Consider health swaps like whole wheat flour or reducing sugar. For a twist, add vanilla or berries. Store leftovers in an airtight container for 3-4 days. To reheat, microwave or warm in the oven covered with foil.
