Ingredients
  

For the shrimp
  • 1 pound shrimp, peeled and deveined (substitute with chicken for a different protein)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced (feel free to add more if you love garlic)
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (reduce for less heat)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 juice of lemon
  • Fresh parsley, chopped for garnish

Method
 

Preparation
  1. Preheat your grill to medium heat.
  2. In a large bowl, combine the olive oil, minced garlic, paprika, cayenne pepper, salt, black pepper, and lemon juice.
  3. Add the shrimp to the mixture, ensuring they are well-coated in the flavorful marinade. Allow to marinate for about 10 minutes.
Cooking
  1. Tear off a large piece of aluminum foil and place the marinated shrimp in the center. Fold the foil into a packet, sealing all edges securely.
  2. Place the foil packet on the preheated grill and cook for about 10 minutes, or until the shrimp are pink and opaque.
  3. Carefully remove the packet from the grill (be cautious of the hot steam!) and open it up. Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat gently in a skillet over medium heat or in the microwave until warmed through.
