Quesadilla Base
  • 4 large flour tortillas Whole wheat is a great alternative
  • 1 tablespoon olive oil or butter For that irresistibly crisp finish

Method
 

Preparation
  1. In a bowl, combine the fresh spinach, crumbled feta cheese, and mozzarella cheese. Season with salt and pepper to taste.
Cooking
  1. On medium heat, add olive oil or butter to a large skillet and let it heat up.
  2. Place one tortilla in the skillet and spoon a generous amount of the spinach and cheese mixture over half of the tortilla. Fold the other half over to create a crescent shape.
  3. Cook the quesadilla for about 3-4 minutes on each side, or until golden and crispy.
  4. Continue the process with the remaining tortillas and filling until they’re all cooked.
  5. Use a sharp knife to cut each quesadilla into wedges and serve with salsa or sour cream on the side if desired.

Notes

For any leftovers, store the quesadillas in an airtight container in the refrigerator. They can be reheated easily in the skillet over low heat. You can also freeze them, layering parchment paper between quesadillas for a quick meal solution.
