Preparation
  1. Preheat your oven to 375°F (190°C). A warm oven means you’re almost there!
  2. In a skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute, stirring frequently.
  3. Toss in the fresh spinach and sauté until wilted, around 3-4 minutes.
  4. In a large bowl, combine the cooked spinach and garlic, ricotta cheese, Parmesan, breadcrumbs, egg, salt, and pepper. Stir until everything is well combined.
  5. Use a tablespoon to scoop out the mixture and shape it into small bites. Place them on a lined baking sheet, leaving space between each.
  6. Drizzle with olive oil to add a beautiful golden color as they bake.
Baking
  1. Bake for 20 minutes or until they are golden brown and the edges are crisp.
  2. Serve immediately and enjoy the delightful crunch and creaminess with each bite.
