  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
Wet Ingredients
  • 1 cup pumpkin puree canned or freshly made
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 0.5 cup vegetable oil or melted coconut oil for a healthier option
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional Ingredients
  • 0.5 cup chopped pecans or walnuts optional for an extra crunch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, and vegetable oil until well blended.
  3. Beat in the eggs and vanilla extract until smooth.
  4. In another bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Fold in the chopped nuts if desired.
  7. Pour the batter into the prepared loaf pan and spread evenly.
Baking
  1. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Wrap tightly in plastic wrap or aluminum foil and store in an airtight container. Can be kept at room temperature for 3 days or in the refrigerator for about a week. Freezes well; slice before freezing.
