  • 2 cloves garlic, minced
  • Salt and pepper to taste
For the Mashed Potatoes
  • 2 pounds potatoes Yukon golds are perfect for a creamy texture.
  • ½ cup heavy cream Or milk for a lighter option.
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh chives, chopped Feel free to use dried chives.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, Parmesan cheese, parsley, minced garlic, salt, and pepper. Mix until well blended; be careful not to overmix.
  3. Roll the mixture into meatballs about 1 inch in diameter and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake the meatballs in the preheated oven for about 25 minutes or until they are cooked through and golden brown.
  2. While the meatballs are baking, peel and chop the potatoes. Boil them in a pot of salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and return them to the pot. Add heavy cream, butter, minced garlic, chives, salt, and pepper. Mash until creamy and smooth.
  4. Plate a generous scoop of garlic herb mashed potatoes and top with the freshly baked meatballs. Garnish with additional chopped parsley for a pop of color and flavor.
