Ingredients
  

Main Ingredients
  • 3 cups Pasta, any shape you prefer
  • 2 cups Corn, fresh or frozen
  • 1 Red onion, finely chopped
  • 1/2 cup Cilantro, chopped
  • 1 cup Feta cheese, crumbled
Dressing
  • 2 Limes, juiced Fresh is best
  • 1/4 cup Olive oil
  • 1 teaspoon Chili powder Adjust to taste
  • Salt and pepper, to taste

Method
 

Cooking Pasta
  1. Bring a large pot of salted water to boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
Preparing Corn
  1. In a skillet over medium heat, add a drizzle of olive oil. Toss in the corn and sauté for about 5–7 minutes until it’s lightly charred. Remove from the heat and allow to cool slightly.
Combining Ingredients
  1. In a large mixing bowl, add the cooled pasta, sautéed corn, chopped red onion, cilantro, and feta cheese.
Making the Dressing
  1. In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper. Pour over the pasta mixture.
Serving
  1. Gently toss everything together until well coated. Adjust seasoning if necessary. Serve chilled or at room temperature.

Notes

This salad can be stored in an airtight container in the refrigerator for up to three days. Refresh with olive oil and lime juice before serving if desired. Toasting spices can enhance their flavor.
