Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add chopped onions and garlic; sauté until onions are translucent, about 3-4 minutes.
- Add the ground beef (or turkey) into the skillet, breaking it up with a wooden spoon and cooking until browned. Drain excess fat if necessary.
- Stir in the rice, diced tomatoes, bell peppers, oregano, salt, and pepper. Mix well and let simmer for about 5 minutes.
Assembly and Baking
- Transfer the mixture to a greased 9x13-inch baking dish, spreading it out evenly. Top with shredded cheese.
- Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until cheese is bubbling and golden.
- Let cool for a few minutes before serving. Garnish with fresh herbs if desired.
Notes
This dish can be assembled ahead of time. Leftover casserole can be stored in an airtight container for 3-4 days in the refrigerator or frozen in portions for up to three months.
