  • 2 lbs chicken (breasts, thighs, or a mix) Feel free to swap for your preferred protein.
  • 1 cup diced tomatoes (canned is fine)
  • 1 cup bell peppers, chopped
  • 1 large onion, sliced
  • 2 cloves garlic, minced
Spices and Seasoning
  • 1 tablespoon chili powder Can be swapped with paprika.
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • optional Fresh herbs for garnish Can use dried herbs instead.

Method
 

Preparation
  1. Start by placing the diced tomatoes at the bottom of your crockpot, forming a flavorful base.
  2. Add the chopped bell peppers and sliced onion on top.
  3. Layer the chicken over the vegetables, seasoning it with chili powder, cumin, salt, and pepper.
  4. Add the minced garlic, distributing it evenly.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  2. Once finished, shred the chicken right in the pot.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze in portions for up to 3 months. Reheat on the stovetop or microwave.
