  • 1 package summer sausage, diced (traditionally made with pork)
  • 2 cups mixed bell peppers, chopped (use whatever colors you have on hand)
  • 1 medium onion, diced (a sweet onion works wonderfully)
  • 2 cloves garlic, minced (for that aromatic touch)
  • 3 cups fresh spinach (can swap with kale for a stronger flavor)
  • 1 teaspoon Italian seasoning (blends beautifully with the sausage)

  • 2 tablespoons olive oil

Cooking Steps
  1. In a large skillet, heat the olive oil over medium heat until it starts to sizzle.
  2. Add the diced onion to the skillet and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and sauté for another minute.
  3. Toss in the diced summer sausage and cook until browned and slightly crispy on the edges, approximately 5-7 minutes.
  4. Add the chopped bell peppers and continue cooking for an additional 5 minutes until they soften.
  5. Sprinkle in the Italian seasoning, salt, and pepper. Finally, stir in the fresh spinach, allowing it to wilt for 1-2 minutes.
  6. Remove from heat and serve directly from the pan for a rustic, family-style meal.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stove over low heat with a splash of water or in the microwave.
