  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon Add nutmeg for extra warmth.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grate your zucchinis using a box grater and squeeze out the excess moisture with a clean kitchen towel.
  3. In a large mixing bowl, combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract. Whisk until well incorporated.
  4. In a separate bowl, sift together the flour, baking soda, baking powder, salt, and spices.
  5. Gradually add the dry ingredients to the wet mixture. Stir gently until just combined; it's okay if a few lumps remain.
  6. Grease a 9x5-inch loaf pan and pour the batter in, smoothing the top with a spatula.
Baking
  1. Place the pan in the preheated oven and bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Once baked, let the zucchini bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Squeeze out moisture to keep the bread from becoming soggy. Adjust sweetness to your liking. Experiment with different spices for varied flavor.
