Preparation
- Preheat your oven to 350°F (175°C).
- Grate your zucchinis using a box grater and squeeze out the excess moisture with a clean kitchen towel.
- In a large mixing bowl, combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract. Whisk until well incorporated.
- In a separate bowl, sift together the flour, baking soda, baking powder, salt, and spices.
- Gradually add the dry ingredients to the wet mixture. Stir gently until just combined; it's okay if a few lumps remain.
- Grease a 9x5-inch loaf pan and pour the batter in, smoothing the top with a spatula.
Baking
- Place the pan in the preheated oven and bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the zucchini bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
