Preparation
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and stir in the taco seasoning, cooking for an additional 2-3 minutes until aromatic.
- In a large bowl, whisk together the milk, eggs, and half of the cheese until well combined.
- In a separate bowl, sift the flour, baking powder, and salt together until well blended.
- Gradually fold the dry mixture into the wet mixture, being careful not to over-mix. Then, gently incorporate the cooked meat and remaining cheese.
Baking
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full, ensuring even distribution.
- Place in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Serving
- Allow the muffins to cool for a few minutes before transferring to a wire rack. Serve warm, topped with your favorite garnishes!
Notes
