  • 1 pound ground beef or turkey (substitute with black beans for a vegetarian twist)
  • 1 packet taco seasoning (feel free to use homemade seasoning)
  • 1 cup shredded cheese (cheddar or pepper jack for a kick!)
  • 1 cup milk (almond or oat milk works perfectly!)
  • 1 cup flour (whole wheat for extra fiber)
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

  • diced tomatoes for garnish
  • green onions for garnish
  • avocado for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.
  2. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and stir in the taco seasoning, cooking for an additional 2-3 minutes until aromatic.
  3. In a large bowl, whisk together the milk, eggs, and half of the cheese until well combined.
  4. In a separate bowl, sift the flour, baking powder, and salt together until well blended.
  5. Gradually fold the dry mixture into the wet mixture, being careful not to over-mix. Then, gently incorporate the cooked meat and remaining cheese.
Baking
  1. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full, ensuring even distribution.
  2. Place in the oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Serving
  1. Allow the muffins to cool for a few minutes before transferring to a wire rack. Serve warm, topped with your favorite garnishes!

Notes

These muffins are excellent for meal prep! Store leftovers in an airtight container in the fridge for up to three days or freeze them for up to three months. Reheat in the microwave or oven.
