  • 12 ounces cheese tortellini Fresh or frozen, both work beautifully.
  • 1 cup cherry tomatoes, halved These bring a burst of sweetness.

Dressing and Seasonings
  • 1/2 cup Italian dressing Store-bought or homemade, it’s the star of the show.

Preparation
  1. In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and rinse under cold water.
  2. While the tortellini is cooking, chop the cherry tomatoes, bell pepper, red onion, cucumber, and olives.
Assembly
  1. In a large mixing bowl, combine the cooked tortellini and chopped vegetables.
  2. Pour the Italian dressing over the mixture. Toss gently to ensure everything is evenly coated.
  3. Add salt and pepper to taste. If desired, you can also enhance the flavors with fresh herbs like basil or parsley.
